The name “Maja Blanca” comes from the Spanish word “maiz blanco,” which means white corn. That means it’s neither Chinese, nor Japanese, but still… It’s very popular in these two countries.  Maja Blanca is traditionally served during special occasions like Christmas and fiestas, but it’s also a popular dessert for everyday snacking.

Ingredients:

  • 1 can (400ml) of coconut milk

  • 1 can (400ml) of evaporated milk

  • 1 can (400g) of condensed milk

  • 1 cup of cornstarch

  • 1 cup of water

  • 3/4 cup of sugar

  • 1 tsp of vanilla extract

  • A pinch of salt

  • Cinnamon powder (optional)

  • Grated coconut or latik for topping

Instructions:

  1. In a large saucepan, combine the coconut milk, evaporated milk, and condensed milk. Stir until well combined.
  2. In a separate bowl, dissolve the cornstarch in water. Mix until there are no lumps.
  3. Add the cornstarch mixture to the saucepan and stir well. Make sure there are no lumps.
  4. Add the sugar, vanilla extract, and salt. Stir constantly over medium heat until the mixture thickens and starts to boil.
  5. Reduce heat to low and continue stirring until the mixture becomes smooth and shiny. This usually takes about 10-15 minutes.
  6. Pour the mixture into a greased pan and smooth out the top with a spatula.
  7. Sprinkle cinnamon powder on top (if desired).
  8. Let the mixture cool for at least an hour or until it has set.
  9. Once the Maja Blanca has set, sprinkle grated coconut or latik on top.
  10. Cut the Maja Blanca into squares.
